Ole it’s Thursday! The weekend is near! That being said, we had a lot of leftovers from the week in our refrigerator that needed to be reinvented into a new delicious, nutritious dish. I scoured Pinterest for some inspiration and found one by Damn Delicious that sounded perfect for what we had on hand. However, I tweaked the recipe a bit adding my own flairs and flavors. I am going to be honest though, I have never cooked with quinoa before making this. But I can honestly say, this will not be my last time. I am a believer in quinoa! The flavors of the black beans, salsa, peppers, and green onion balance nicely with the heartiness of the quinoa. The lime gives it that extra kick and pizazz and truly makes the dish what it is. Sidenote: My dad is a picky eater. He would prefer the term particular, however he is my best food critic because of his choosiness. He L-O-V-E-D this dish!
