Nothing says summer quite like lemon poppy seed. Technically it may not be summer anymore with school back in session, however the first day of fall is September 23rd. Don’t rain on my summer parade! We still have three more weeks of sunny days and firefly-filled nights. So enjoy it with this recipe I’ve concocted! The tang of the lemon with the sweetness of the blueberries makes this one heck of a muffin. Seriously, I was surprised by how delicious these are. No sugar added, yep that’s right, no sugar at all!
Sidenote: strawberries, raspberries, or blackberries may be a worthy replacement for the blueberries if you have those on hand. Experiment with it and let me know how your creation turns out. The freshness of the blueberries explodes with flavor in your palette, while the tang of the lemon and honey adds a sweet zing. These are denser muffins because of the greek yogurt and whole wheat flour. Best eaten the day day of but can be eaten up to 3 days after with a smidgen of butter and slightly heated. ENJOY
