Lemon Ricotta Pancakes

Scientific studies show that if lemon is the main ingredient in a dish, it’s 756,219,034 times better. Now I wish that statistic were true, but think about it. Chicken Piccata, risotto, lemon bars, Arnold Palmers, glazed lemon cookies, roasted vegetables, baked fish dishes. All of these recipes just taste better with lemon. I remember when I visited Italy my sophomore year of college for Janterm, and by the end of the trip, every time someone ordered a dish with lemon as the key ingredient it was sure to be everyone’s favorite. 

Lemon is both acidic and sweet, and that’s what makes it so tasty! And after my recent visit to NYC to reunite with college friends, I became obsessed with making a sweet and tangy recipe to rival the Lemon Ricotta pancakes at Sarabeth’s. Those pancakes tasted like cake. I had to find a recipe that I could make at home. Well, mission accomplished!
