First of all, it doesn’t require any chill time, which definitely cuts down on your prep time. Also it’s extremely difficult to mess up, so even the least experienced of bakers should be able to whip these up in a pinch!
And when you add Food Network’s Royal Icing on top, it’s like a Christmas party in your mouth! Let’s talk about how festive these cookies look when you ice and sprinkle them?!? For the ones I made the other day, I did not put lemon zest in the icing. However in the future, I think I would. The meringue powder in the icing has a sweet flavor that would balance really well with the tang of lemon zest.
Food Network’s Royal Icing Recipe (revised)
1 lb box of confectioner’s sugar
2 Tbsp meringue powder (can be found at your local Michael’s Craft Store)
5 Tbsp water
1 tsp lemon zest
Combine all 4 ingredients listed above in a bowl with a handheld mixer on low until soft peaks form. Separate into small bowls for food coloring. Pour into separate piping bags and create your sugar cookie masterpieces.
So get to getting and start creaming, mixing, rolling, and baking, Christmas is only 18 days away!
