Weeknight dinners can be such a pain to plan ahead and create. Honestly, I’ve gotten really bad about meal planning as of late. And summer is the time of year where I have the least amount of motivation to cook. But when you find easy, healthy meals that also taste good, it’s hard not to share them. Here are three easy weeknight dinners that are picky-eater approved and simple.

I love homemade Asian dishes, but I find that many of the recipes require too many extra ingredients that I don’t have on hand in my pantry. Have no fear, this recipe requires minimal random ingredients! And it’s full of veggies and protein. I use microwave rice (I know, blasphemy!) to simplify this meal which can be whipped up in less than 20 minutes.
Sheet Pan Veggies and Chicken Sausage


My mom used to make sheet pan dinners a lot in high school, and they have quickly become a Brown household favorite too! The beauty of the sheet pan dinner is that it doesn’t really require a recipe. You just throw together whatever veggies and protein you have on hand, douse them in your seasoning of choice and olive oil, place in the oven at 375 degrees and cook until crispy. My favorite combo includes chicken sausage, bell peppers, broccoli, onion, cherry tomatoes, brussel sprouts, and mushrooms.
