Double Chocolate Protein Balls

I’m a sucker for all things chocolate-peanut butter.

Ask my husband and he’ll tell you my go-to ice cream order is anything chocolate-peanut butter. But these protein balls are the perfect bite when you need something sweet and salty! Sometimes I eat one for breakfast with my coffee, and it’s the ultimate way to start my morning. Whether you’re in need of a snack, morning pick-me-up, or afternoon treat, these protein balls fit the bill. Packed with creamy peanut butter, flax seeds, oats, honey, pecans, chocolate protein powder, and chocolate chips, these will satisfy your sweet tooth without making you feel an ounce of regret.

Double Chocolate Protein Balls

1 cup creamy peanut butter
2 Tbsp honey
1 tsp vanilla extract
1 cup old-fashioned oats
1/2 cup mini chocolate chips
1/2 cup chopped pecans
2 scoops of chocolate protein powder (I use EVOLVE)
1 Tbsp flax seeds
1-2 Tbsp unsweetened almond milk (as needed)

1. Combine the peanut butter, honey, and vanilla extract. Place in microwave for 30 seconds. Stir to combine.
2. Add dry ingredients to peanut butter mixture. Stir with spatula until fully combined. Add in almond milk as needed to help form clumps.
3. Using a cookie dough scoop, create bite-sized bits then using the palms of your hands roll them into balls.
4. Place in refrigerator for at least 1 hour before eating. Keep in fridge and enjoy whenever you need a burst of energy!
