
Everyone loves those Starbucks Sous Vide Egg Bites! My parents even love them. They’re carb-conscious and protein-heavy, not to mention they’re delicious. But we can’t eat out all the time, so here’s my Copycat Starbucks Sous Vide hack. All you need are a pressure cooker or Instant Pot, silicone molds (I got mine from Amazon: 1 pack -$8.99, 2 pack – $15.99), and a few basic ingredients.
You may be thinking, “Did you buy these molds for just this recipe?” No, I bought them because there are a lot of things you can make in these things besides Copycat Egg Bites, including but not limited to brownies, muffins, pancakes, popsicles, baby food, and yogurt. So in my mind that justifies the expense knowing there are other uses for it, but to each their own.
What does “sous vide” mean?
Let me first start off by explaining what the heck it means. In French, sous vide means “under vacuum”. It’s a type of low temperature cooking technique where you place the food in either a plastic pouch or glass container and cook it in a water bath at a consistent temperature for quite longer than the conventional cooking time. This allows for the food to be cooked evenly without overcooking the outside, however it also helps it retain it’s natural moisture.
This may not be exactly how the French would do it, but when you have a pressure cooker, you have to get creative with your uses!

Instant Pot Egg Bites
8 eggs
1 cup reduced-fat cottage cheese
Dash of milk (I use unsweetened almond)
1 red bell pepper, diced
1/2 cup turkey sausage
1 cup shredded Italian cheese
Salt & pepper to taste
1. Mix all the ingredients together until well combined. Pour into egg bite silicone molds.
2. Pour 1 cup of water into the bottom of your pressure cooker or Instant Pot. Place metal grate into pot and put one silicone mold on top.
3. Cook for 10 minutes on HIGH pressure, followed by 5 minutes on LOW pressure.
4. Let stand and ENJOY!
Yields 14 egg bites



These little bites are delectable and so versatile! You can make them with just about any meat-veggie-cheese combo under the sun. Technically the two flavor combinations that Starbucks offers is Bacon & Gruyere and Red Pepper, Spinach, & Monterey Jack. So feel free to use those ingredients instead.
